Bacon and Feta Stuffed Chicken

Recipe: Crockpot: Bacon and Feta Stuffed Chicken
Ingredients
- 1/4 cup crumbled cooked bacon
- 1/4 cup feta cheese
- 4 boneless, skinless chicken breast halves
- 2 14.5 oz cans diced tomatoes
- 1 Tbsp dried basil
Instructions
- 1. In a small bowl, mix bacon and cheese together lightly.
- Cut a pocket in the thicker side of each chicken breast. Fill with 1/4 of the bacon and cheese. (1/4 of a cup is 4 tablespoons – so 1 tablespoon per chicken breast)
- Place chicken in slow cooker. (I sprayed with olive oil first) Top with tomatoes and sprinkle with basil.
- Cover and cook on High 1.5 to 3 hours or until chicken is tender, but not dry or mushy.
Cooking time (duration): 10 prep. 1.5-3 cooking
Number of servings (yield): 4
