Pinwheel Meatloaf

Seriously I hated my mother’s meatloaf growing up. I gagged and refused to eat it. It tasted like unflavored meat…until she found this gem.  Enjoy, it’s our favorite meatloaf recipe.

Recipe: Pinwheel Cheese Meatloaf

Ingredients

  • 1 1/2 lbs.ground beef
  • 1 c. soft bread crumbs
  • 1 egg
  • 1/2 tsp. salt
  • 8 oz. can tomato sauce
  • 2 c. (8 oz) shredded cheese

Instructions

  1. Mix first four ingredients and 1/2 (4 oz) tomato sauce.
  2. Pat meat to 14×10 on foil.
  3. Sprinkle 1 1/2 c. cheese to 1″ of edge.
  4. Roll from shorter side. Seal edges.
  5. Transfer to pan, seam side down.
  6. Bake at 350 degrees for 45 minutes.
  7. Pour remaining sauce over meat. Bake 15 more minutes
  8. Sprinkle with 1/2 cup cheese.
  9. Let stand 10 minutes before eating.

Quick Notes

I didn’t read all the directions before making and put ALL the cheese in the meatloaf, it was just as tasty.
