Recipe: Italian Cream Cheese Cake

Ingredients

  • 1 box white cake mix
  • 1 1/3 cup water
  • 3 Tbsp oil
  • 3 large egg whites
  • 1 cup coconut
  • 1 cup chopped pecans
  • Frosting
  • 11 oz cream cheese room temperature
  • 3/4 cup butter room temperature
  • 1 16 oz box powdered sugar
  • 1 1/2 tsp vanilla

Instructions

Cake Instructions

1.  Grease three 8″ cake pans; preheat oven to 350 degrees.

2. Mix cake according to box directions, then stir in pecans and coconut. Pour into each of the three pans (divided evenly)

3. Bake for about 24 minutes or until toothpick comes out clean. Cool completely before frosting.

Frosting

1. Beat first 3 ingredients at medium speed until smooth. Gradually add powdered sugar, beating at low speed until light and fluffy.

2. Stir in vanilla. Add pecans and coconut if desired.

3. Frost between layers, sides and top.

4. Chill before serving.

Quick Notes

The frosting makes 1 1/2 batches.
