Buffalo Chicken Pizza

I jokingly said to JPW that I wished we had a Super Bowl party to attend and he responded with, “You mean you wish we had friends here?”…Haha, well yes, I wish we had friends here. Either way we’ll be celebrating at our house, just the three of us. Even though neither of our teams are playing, I’m a Patriots fan and JPW a Panthers fan (I look past that), I’m putting together a fun party dinner.

Recipe: Buffalo Chicken Pizza

Ingredients

  • 2 Deli fried chicken tenders
  • 1/2+2Tbsp buffalo wing sauce, divided
  • 1 (12oz) pre-baked pizza crust
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup blue cheese salad dressing

Instructions

  1. Place oven rack in center of oven. Preheat over to 425 degrees. Cut chicken tenders into small pieces; combine with 1/2 cup wing sauce.
  2. Place pizza crust on a baking sheet (or perforated pizza pan for best results). Spread 2 Tbsp wing sauce evenly over crust. Cover with 1/2 cup mozzarella cheese, then top with chicken mixture.
  3. Spoon small dollops of salad dressing evenly over top of pizza. Sprinkle with 1/2 cup mozzarella cheese. Bake 7-9 minutes or until cheese melts. Let stand 3-5 minutes, then cute into 2 1/2 inch squares and serve.

I also plan to make a nacho layer dip. I’m totally making it up as I go, so I don’t have a recipe to share.  Of course they’ll be beer and munchies.  Go Colts!!
