Bacon wrapped Pork Loin

Again, we love this meal and it’s very easy and yields leftovers for our family of 3, well only 2 are dining at the table.

Recipe: Bacon wrapped Pork Loin


  • 1 pork tenderloin
  • 3 scallions
  • 5 strips bacon
  • 1/2 tsp. pepper
  • 1 Tbsp. sugar


  1. Heat oven to 425 degrees.
  2. Make a long slit lengthwise down the center of the loin, careful not to cut all the way through. Open like a book, place scallions on one cut side of pork; fold pork back over to close.
  3. Wrap bacon slices around pork to cover completely.
  4. Place in small roasting pan
  5. Rub 1/2 tsp. pepper and 1 Tbsp. sugar over bacon.
  6. Roast 20 minutes or until instant read thermometer inserted in center reads 150 degrees. Let stand 10 minutes before slicing.

Quick Notes

Instead of scallions in center of pork you can add fresh herbs and spices. To add a spicy kick to the outside of the loin, spread dijon mustard before wrapping the bacon. Also substitute brown sugar.
